COVID-19 QUARANTINE RECIPES IN THE KITCHEN PART 6: HUMMUS AND CHOCOLATE MOUSSE

Let’s discover the power of the chickpeas through two VEGAN recipes: Hummus and Chocolate mousse!

In this video, we will show you how to make two recipes with 2 cans of 400grs of chickpeas as the main ingredient. 

We will use the chickpeas for the Hummus and keep the juice of the chickpeas for the Mousse.

Hummus is a famous Middle East dish (especially from Lebanon, Israel, Palestine but also Greece, Turkey, Jordan, Syria and Egypt) it’s mostly a chickpea puree with tahini, garlic, lemon juice and olive oil. You eat it as a starter.

To prepare it you will need:

-2 cans of 400 gr of Chickpeas (keep the juice for another recipe)

-3 tbsp of tahini

-1 or 2 garlic cloves

–  juice of 1 lemon or 3 tbsp of lemon juice

-1tbsp of Cumin

-Salt and pepper to taste

-Olive oil

-1/2 glass of water

Optional

-Coriander

-Parsley

-Sesame seeds

For the Chocolate Mousse:

-The juice of the chickpeas (2 cans of 400grs) also called Aquafaba

-1 pinch of salt

-200 grams of Chocolate (dark)

-Vanilla flavour or vanilla sugar

Optional: agrum zest (orange or lemon)

Chocolate Mousse is a french dessert born in the royal kitchen of the king Louis XVI, created by his servant Charles Fazi (from Switzerland) and got popular in 1820 with the book of recipes “Royal cooker”.

However, this recipe is very simple.

It’s traditionally with whisked egg whites, chocolate and other variations but the chickpeas juice, called AQUAFABA, do the same job and doesn’t change anything of the taste.

I only recommend to put the bowl in the fridge for a least 1 hour, it helps a lot.

When the mousse is ready it’s even better the day after but 2 hours after, the taste very good too!
